WORLD BUILDING WITH BLOBS, 2024
This dinner, created during a culinary residency at Ox-Bow School of Art & Artist’s Residency and in collaboration with their glass studio, featured blobby shrimp cooked on pools of molten glass and a tablescape with a jelly river and salt crystal garden. The tablescape, inspired by 18th c. garden and table designs, asked diners to tend to the land—even when a charred pea “algae bloom” engulfed the jelly river for the second course. A peach-iced-tea flavored halo-halo dessert bloomed with hand-carved lapsang-souchong jelly crystals.
